When making your meals it is important they are full of flavour and taste great. It is essential to backing up all your hard work in the gym. Try be creative with your salads as we all know a plain lettuce, tomato and olive oil salad isn’t the most appetising. Try this Broccoli & Coconut salad, you won’t look back.
Broccoli & Coconut Salad
2 broccoli heads
4 medium size carrots
3/4 cup of coconut- desiccated
handful of black currants
2 eggs- your way: scrambled, poached, fried, soft/ hard boiled
nuts- we used pecans!
All of our fruit and vegetables come from the Burleigh Heads Markets, the freshness is far greater than the supermarkets. Firstly chop the broccoli & carrot into small pieces then place into the Thermomix or good food processor. Turn on high speed to ground down finely. A good tip is to make this separately when making larger amounts. Lastly add in shredded coconut & black currants then turn on low speed so it mixed thoroughly together. We like to serve this broccoli & coconut salad with lemon or lime. Adding in your favourite style of eggs (we love hard boiled) so you receive enough protein and your favourite type of nuts so you obtain enough good fats in the meal. These pecans are from ‘ActivEarth’ in Burleigh Heads, local, fresh and activated.
What is Activation?
By activating nuts- it removes a significant part of the toxins such as ‘phytic acid’, this process improves digestion and nutrient absorption in the body. The nuts are then dehydrated at low temperature until crunchy while maximising their natural nutritional value.
