You know by the look of these bars that they are going to be good for you. There are dates for sweetness, ground cinnamon for warmth, velvety apricots, and lots of seeds for my favourite part – the crunch. I got lots of seeds and nuts from Activearth. An excellent online store on the Gold Coast. I could find chia seeds, pumpkin seeds (known as pepitas), sunflower, walnuts and almonds for flavour and texture. These bars are seriously good.

1 cup Almonds
1 cup Walnuts
1/2 cup Pitted Dates
7 Dried Apricots
1/4 cup Chia Seeds
1/2 cup Sunflower Seeds
1/2 cup pepitas
1/2 tsp Cinnamon
1/4 cup water

Combine all ingredients into a food processor and blitz it will start to form a batter. Spread into a flat container and press evenly with a spatula so it becomes smooth and flat. Leave in the freezer or fridge overnight. After cut into bite-size pieces.
